
Harissa Marinated Grilled Vegetables
A delicious and spicy way to use up expired Harissa paste while reducing food waste. The vegetables are marinated in the paste and then grilled to perfection.

Ingredients
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 eggplant, sliced
- 1 red onion, sliced
- 2 tablespoons expired Harissa paste
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the expired Harissa paste, olive oil, salt, and pepper.
- Add the sliced vegetables to the bowl and toss until well coated with the marinade.
- Cover the bowl and let the vegetables marinate in the fridge for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Place the marinated vegetables on the grill and cook for 5-7 minutes per side, or until they are tender and slightly charred.
- Remove from the grill and serve hot as a side dish or with your favorite protein.
