Ingredients
- 1 cup dried lentils
 - 2 tablespoons olive oil
 - 1 onion, chopped
 - 2 carrots, diced
 - 2 celery stalks, diced
 - 3 cloves garlic, minced
 - 1 tablespoon cumin
 - 1 tablespoon coriander
 - 2 teaspoons smoked paprika
 - 1 teaspoon turmeric
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 4 cups vegetable broth
 - 2 tablespoons slightly expired Harissa paste
 - Juice of 1 lemon
 - Fresh cilantro, for garnish

Instructions

Rinse the lentils under cold water and drain.

In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.

Add the garlic, cumin, coriander, smoked paprika, turmeric, salt, and black pepper to the pot. Stir well to coat the vegetables in the spices.

Add the lentils, vegetable broth, and slightly expired Harissa paste to the pot. Stir to combine.

Bring the soup to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.

Stir in the lemon juice.
