Ingredients

  • 2 bell peppers, sliced
  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 1 red onion, sliced
  • 2 tablespoons expired Harissa paste
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

In a large bowl, combine the expired Harissa paste, olive oil, salt, and pepper.

Add the sliced vegetables to the bowl and toss until well coated with the marinade.

Cover the bowl and let the vegetables marinate in the fridge for at least 30 minutes.

Preheat the grill to medium-high heat.

Place the marinated vegetables on the grill and cook for 5-7 minutes per side, or until they are tender and slightly charred.
