Ingredients
- 2 cups mixed vegetables (e.g., carrots, bell peppers, zucchini, eggplant)
- 2 tablespoons olive oil
- 1 teaspoon expired sumac (safe for consumption)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the vegetables into bite-sized pieces.
- In a large bowl, toss the vegetables with olive oil, expired sumac, salt, and pepper until well coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring once halfway through.
