
Asian Noodle Salad
A refreshing and flavorful noodle salad that uses expired soy sauce. Make sure the soy sauce is safe to consume before using.

Ingredients
- 8 ounces cooked noodles (such as soba, udon, or rice noodles)
- 2 tablespoons expired soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts
- Lime wedges, for serving
Instructions
- In a small bowl, whisk together the expired soy sauce, rice vinegar, honey, and sesame oil to make the dressing.
- In a large mixing bowl, combine the cooked noodles, green onions, cucumber, carrot, and cilantro.
- Pour the dressing over the noodle mixture and toss to coat everything evenly.
- Garnish with chopped peanuts.
- Serve the noodle salad with lime wedges on the side.
