
Relish Potato Salad
A classic potato salad recipe that makes use of expired relish to add tanginess and flavor.

Ingredients
- 2 lbs potatoes, boiled and diced
- 1/2 cup mayonnaise
- 1/4 cup expired relish
- 2 tablespoons Dijon mustard
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- In a large bowl, combine the mayonnaise, expired relish, Dijon mustard, salt, black pepper, and paprika.
- Add the diced potatoes, chopped onion, chopped celery, and chopped parsley to the bowl. Mix well until all ingredients are evenly coated.
- Refrigerate the potato salad for at least 1 hour to allow the flavors to meld together.
- Serve the relish potato salad chilled as a side dish with your favorite main course.
- Note: Make sure the relish shows no signs of spoilage or off flavors before using. If any signs of spoilage are present, discard the relish.
