- 2 lbs potatoes, boiled and diced
 - 1/2 cup mayonnaise
 - 1/4 cup expired relish
 - 2 tablespoons Dijon mustard
 - 1/2 cup chopped onion
 - 1/4 cup chopped celery
 - 1/4 cup chopped fresh parsley
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/2 teaspoon paprika

In a large bowl, combine the mayonnaise, expired relish, Dijon mustard, salt, black pepper, and paprika.

Add the diced potatoes, chopped onion, chopped celery, and chopped parsley to the bowl. Mix well until all ingredients are evenly coated.

Refrigerate the potato salad for at least 1 hour to allow the flavors to meld together.

Serve the relish potato salad chilled as a side dish with your favorite main course.
