
Expired Mayo Pasta Salad
A refreshing pasta salad that makes use of expired mayonnaise, while ensuring food safety.

Ingredients
- 250g pasta
- 1 cup expired mayonnaise (60 days past expiry)
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, expired mayonnaise, cucumber, bell pepper, red onion, dill, lemon juice, salt, and pepper.
- Mix well to coat the pasta and vegetables with the mayo.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled and enjoy!
