Ingredients

  • 250g pasta
  • 1 cup expired mayonnaise (60 days past expiry)
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

Cook the pasta according to the package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked pasta, expired mayonnaise, cucumber, bell pepper, red onion, dill, lemon juice, salt, and pepper.

Mix well to coat the pasta and vegetables with the mayo.

Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
