
Expired Mayo Chicken Sandwich
A delicious chicken sandwich made with expired mayonnaise, ensuring food safety through proper cooking.
Ingredients
- 2 chicken breasts
- 1 cup expired mayonnaise (60 days past expiry)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices bread
- Lettuce and tomato slices for serving
Instructions
Preheat the oven to 400°F (200°C).
Season the chicken breasts with salt, pepper, and garlic powder.
In a small bowl, mix the expired mayonnaise, Dijon mustard, and lemon juice.
Place the chicken breasts on a baking sheet and spread a generous amount of the mayo mixture over each breast.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
Remove the chicken from the oven and let it rest for a few minutes.
Toast the bread slices and spread some of the remaining mayo mixture on each slice.
Slice the cooked chicken breasts and assemble the sandwiches with lettuce and tomato slices.
