- 2 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup expired goat cheese crumbles
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Add the chopped spinach and cook until wilted. Remove from heat and let cool.
- Using a sharp knife, cut a pocket into each chicken breast.
- Season the chicken breasts with salt and pepper.
- In a bowl, combine the cooled spinach, expired goat cheese crumbles, and season with salt and pepper.
- Stuff each chicken breast with the spinach and goat cheese mixture, then secure with toothpicks.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the toothpicks and let the chicken rest for a few minutes before serving.
