
Halloumi and Quinoa Salad
A refreshing and nutritious salad made with slightly expired Halloumi and quinoa.

Ingredients
- 200g halloumi, slightly expired
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- 1. Slice the halloumi into 1/4 inch thick pieces.
- 2. Heat a non-stick pan over medium heat.
- 3. Cook the halloumi slices in the pan for 2-3 minutes on each side, until golden brown.
- 4. In a large bowl, combine the cooked quinoa, diced cucumber, diced red bell pepper, chopped mint leaves, and chopped parsley leaves.
- 5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- 6. Pour the dressing over the salad and toss to combine.
- 7. Place the cooked halloumi slices on top of the salad.
- 8. Serve immediately and enjoy!
