
Greek Feta Pasta Salad
A refreshing pasta salad that uses expired but safe Feta cheese as a key ingredient, reducing food waste.

Ingredients
- 200g penne pasta
- 100g expired Feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and rinse with cold water.
- In a large mixing bowl, combine the cooked pasta, crumbled Feta cheese, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Pour the dressing over the pasta mixture and toss to combine.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Before serving, garnish with fresh basil leaves.
- Serve chilled and enjoy!
