Ingredients

  • 4 boneless, skinless chicken breasts
  • 100g expired Feta cheese, crumbled
  • 1 cup fresh spinach leaves
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.

Using a sharp knife, cut a slit horizontally into the side of each chicken breast to create a pocket for stuffing.

In a small bowl, combine the crumbled Feta cheese, fresh spinach leaves, sun-dried tomatoes, minced garlic, dried oregano, salt, and black pepper.

Stuff each chicken breast with the Feta cheese and spinach mixture, and secure with toothpicks to hold the filling in place.

Heat olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts for about 2 minutes per side until browned.

Transfer the chicken breasts to the prepared baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.

Remove the toothpicks before serving.
