
Goat Cheese and Spinach Stuffed Chicken Breast
A delicious and safe recipe that uses expired goat cheese crumbles to make a flavorful stuffing for chicken breast. Proper cooking ensures food safety.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup expired goat cheese crumbles
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
Add the chopped spinach and cook until wilted. Remove from heat and let cool.
Using a sharp knife, cut a pocket into each chicken breast.
Season the chicken breasts with salt and pepper.
In a bowl, combine the cooled spinach, expired goat cheese crumbles, and season with salt and pepper.
Stuff each chicken breast with the spinach and goat cheese mixture, then secure with toothpicks.
Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the toothpicks and let the chicken rest for a few minutes before serving.
