Ingredients
- 1.5 lbs baby potatoes
- 2 tbsp Dijon Mustard
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the Dijon Mustard, olive oil, garlic powder, salt, and black pepper.
- Halve the baby potatoes and add them to the bowl. Toss until the potatoes are well coated with the mustard mixture.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy.
- Serve hot as a side dish or snack.
