Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 unopened string cheese sticks
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, Parmesan cheese, parsley, milk, egg, garlic powder, salt, and black pepper.
  3. Take a small amount of the meat mixture and flatten it in your hand. Place a string cheese stick in the center and wrap the meat around it, forming a meatball. Repeat with the remaining meat mixture and string cheese sticks.
  4. Place the meatballs on a baking sheet and bake for 25-30 minutes, or until cooked through.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  6. Serve the meatballs with the warm marinara sauce for dipping.

Ingredients

  • 4 unopened string cheese sticks
  • 4 tortillas
  • 1 tomato, diced
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Preheat a non-stick pan over medium heat.
  2. Place a tortilla on the pan and sprinkle half of the diced tomato, onion, bell pepper, lettuce, and cilantro over one half of the tortilla.
  3. Place 1 unopened string cheese stick on top of the vegetables.
  4. Fold the tortilla in half, covering the cheese and vegetables.
  5. Press down gently with a spatula and cook for 2-3 minutes, or until the tortilla is golden brown.
  6. Carefully flip the quesadilla and cook for another 2-3 minutes, or until the cheese is melted and the tortilla is crispy.
  7. Remove from heat and repeat the process with the remaining tortillas and ingredients.
  8. Cut each quesadilla into wedges and serve hot with sour cream.
  9. Season with salt and pepper to taste.
