Ingredients
- 2 cups cooked sushi rice
- 1 cup Ikura salmon roe (expired but safe)
- 1 cucumber, thinly sliced
- 1 avocado, sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- 1 green onion, chopped
Instructions
- In a small bowl, mix together soy sauce, rice vinegar, sesame oil, and sesame seeds. Set aside.
- Divide the cooked sushi rice into bowls.
- Top each bowl with cucumber slices, avocado slices, and Ikura salmon roe.
- Drizzle the soy sauce mixture over the sushi bowls.
- Garnish with chopped green onion.
- Serve immediately and enjoy!
