Ingredients
- 2 cans of expired smoked herring fillets (kippers)
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 small red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Drain and rinse the expired smoked herring fillets.
- In a large bowl, combine the salad greens, cucumber, red onion, and chopped dill.
- In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Add the smoked herring fillets to the salad bowl and drizzle the lemon-dill dressing over the top.
- Toss gently to combine all the ingredients.
- Let the salad sit for 5 minutes to allow the flavors to meld together.
- Serve the smoked herring salad immediately and enjoy!
