
Shrimp Fried Rice
A flavorful fried rice recipe that utilizes expired frozen shrimp. The shrimp is thoroughly cooked to ensure food safety.

Ingredients
- 1 lb expired frozen shrimp, thawed
- 4 cups cooked rice, preferably day-old
- 2 tbsp vegetable oil
- 1 cup frozen mixed vegetables
- 3 cloves garlic, minced
- 2 eggs, beaten
- 3 tbsp soy sauce
- 1/2 tsp sesame oil
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and cook for 1 minute until fragrant.
- Add the thawed shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.
- Push the cooked shrimp to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked.
- Add the frozen mixed vegetables to the skillet and stir-fry for 2-3 minutes until heated through.
- Add the cooked rice to the skillet and stir-fry for 5 minutes, breaking up any clumps.
- Pour in the soy sauce and sesame oil. Stir well to coat the rice and vegetables.
- Add the cooked shrimp back to the skillet and stir to combine.
- Season with salt and pepper to taste. Stir well.
- Remove from heat and garnish with chopped green onions.
- Serve hot and enjoy!
