Ingredients
- 1 lb commercially frozen raw halibut
- 2 tbsp curry powder
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 cup green peas
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Thaw the commercially frozen raw halibut according to package instructions.
- Cut the halibut into bite-sized pieces.
- In a large pan, heat vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté until the onion is translucent.
- Add the curry powder and cook for another minute to release its flavors.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the halibut pieces to the pan and cook for about 5 minutes, or until the fish is cooked through.
- Stir in the sliced red bell pepper and green peas.
- Season with salt and pepper to taste.
- Simmer for an additional 2-3 minutes to heat the vegetables.
- Serve the halibut curry over steamed rice or with naan bread.
