Ingredients

  • 1 pound salted cod bacalhau
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 can diced tomatoes
  • 1/4 cup black olives, pitted
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Soak the salted cod bacalhau in cold water for 24 hours, changing the water every 6 hours to remove excess salt.
  2. After soaking, remove the skin and bones from the cod and cut into bite-sized pieces.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  4. Add the red and green bell peppers and continue to sauté until they soften.
  5. Add the diced tomatoes, black olives, paprika, and black pepper. Stir well to combine.
  6. Gently add the cod pieces to the skillet and cook for about 10 minutes, stirring occasionally.
  7. Serve hot, garnished with fresh parsley.
