Ingredients
- 1 pound salted cod bacalhau
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 can diced tomatoes
- 1/4 cup black olives, pitted
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Soak the salted cod bacalhau in cold water for 24 hours, changing the water every 6 hours to remove excess salt.
- After soaking, remove the skin and bones from the cod and cut into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the red and green bell peppers and continue to sauté until they soften.
- Add the diced tomatoes, black olives, paprika, and black pepper. Stir well to combine.
- Gently add the cod pieces to the skillet and cook for about 10 minutes, stirring occasionally.
- Serve hot, garnished with fresh parsley.
