
Greek Yogurt Chicken Salad

Ingredients
- 2 cups cooked chicken breast, shredded
- 1/2 cup expired Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the expired Greek yogurt, mayonnaise, Dijon mustard, and lemon juice until well combined.
- Add the shredded chicken, celery, red onion, and parsley to the bowl. Mix until the chicken is evenly coated with the dressing.
- Season with salt and pepper to taste. Refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve the chicken salad on a bed of lettuce, in a sandwich, or with whole wheat crackers.
