
Greek Yogurt Pasta Sauce
A creamy and tangy pasta sauce made with slightly expired Greek yogurt to reduce food waste.
Ingredients
- 2 cups Greek yogurt
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 8 ounces pasta of your choice
Instructions
In a large skillet, heat olive oil over medium heat.
Add minced garlic to the skillet and cook until fragrant, about 1 minute.
Add cherry tomatoes, dried oregano, salt, and black pepper to the skillet and cook for 5 minutes, until the tomatoes start to soften.
Reduce the heat to low and stir in the Greek yogurt. Cook for another 2 minutes, stirring constantly.
Meanwhile, cook the pasta according to package instructions until al dente.
Once the pasta is cooked, drain it and add it to the skillet with the sauce. Toss to coat the pasta evenly with the sauce.
Remove the skillet from heat and stir in the fresh basil.
Serve the Greek yogurt pasta sauce over the cooked pasta and enjoy!
