
Thai Green Curry Vegan Fried Rice

Ingredients
- 2 cups cooked rice
- 1 cup Thai Green Curry Vegan
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/4 cup chopped spring onions
Instructions
- Heat vegetable oil in a large pan or wok over medium heat.
- Add the mixed vegetables to the pan and stir-fry for 3-4 minutes.
- Add the Thai Green Curry Vegan to the pan and cook for another 2 minutes.
- Add the cooked rice to the pan and stir-fry for 5-6 minutes, until heated through.
- Drizzle soy sauce over the rice and mix well.
- Garnish with chopped spring onions and serve hot.
