
Spicy Lentil and Vegetable Stew

Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Rinse the lentils and soak them in water for 1 hour. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant.
- Add the carrots, celery, bell pepper, and zucchini to the pot. Cook for 5 minutes, until the vegetables start to soften.
- Stir in the diced tomatoes, vegetable broth, cumin, chili powder, paprika, salt, and pepper.
- Add the soaked lentils to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Adjust the seasoning to taste. Serve hot.
