Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste

Rinse the lentils and soak them in water for 1 hour. Drain and set aside.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant.

Add the carrots, celery, bell pepper, and zucchini to the pot. Cook for 5 minutes, until the vegetables start to soften.

Stir in the diced tomatoes, vegetable broth, cumin, chili powder, paprika, salt, and pepper.

Add the soaked lentils to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.

Adjust the seasoning to taste. Serve hot.
