A refreshing ceviche recipe that makes use of expired but still edible Sea Grapes Umibudo.

Ingredients
- 1 cup Sea Grapes Umibudo, past expiration date but still safe to consume
- 1/2 cup lime juice
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1 small jalapeno, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Rinse the Sea Grapes Umibudo thoroughly under cold water to remove any debris.
- In a bowl, combine the Sea Grapes Umibudo, lime juice, red onion, bell pepper, jalapeno, and cilantro.
- Season with salt and pepper to taste.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the Sea Grape ceviche chilled and enjoy.
