Ingredients
- Carrots Fresh Whole
- Mixed greens
- Cherry tomatoes
- Red onion
- Feta cheese
- Lemon juice
- Olive oil
- Honey
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and slice the carrots into thin strips.
- Toss the carrot strips with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 20 minutes, or until tender.
- In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and roasted carrots.
- In a small bowl, whisk together lemon juice, olive oil, honey, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss to combine.
- Crumble feta cheese over the top of the salad.
- Serve immediately and enjoy!
