
Bacon Bits Breakfast Scramble
A hearty breakfast scramble that makes use of expired bacon bits while ensuring food safety.

Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 4 eggs
- 1/4 cup milk
- 1/2 cup expired imitation bacon bits
- Salt and pepper to taste
Instructions
- Heat olive oil in a non-stick skillet over medium heat.
- Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture into the skillet with the sautéed vegetables.
- Cook, stirring occasionally, until the eggs are almost set.
- Add the expired imitation bacon bits and continue cooking until the eggs are fully set and the bacon bits are heated through.
