
Goat Cheese and Vegetable Frittata

- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup expired goat cheese chevre, crumbled
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, milk, salt, and black pepper.
- Heat the olive oil in an oven-safe skillet over medium heat.
- Add the onion, bell pepper, and zucchini to the skillet. Cook until the vegetables are slightly softened, about 5 minutes.
- Pour the egg mixture over the cooked vegetables in the skillet.
- Sprinkle the cherry tomatoes and crumbled goat cheese chevre evenly over the egg mixture.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set in the center.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
