
Goat Cheese and Vegetable Frittata
A delicious frittata recipe that uses expired but still safe to consume goat cheese chevre. Ensure the vegetables are fresh and in good condition.
Ingredients
- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup expired goat cheese chevre, crumbled
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, whisk together the eggs, milk, salt, and black pepper.
Heat the olive oil in an oven-safe skillet over medium heat.
Add the onion, bell pepper, and zucchini to the skillet. Cook until the vegetables are slightly softened, about 5 minutes.
Pour the egg mixture over the cooked vegetables in the skillet.
Sprinkle the cherry tomatoes and crumbled goat cheese chevre evenly over the egg mixture.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set in the center.
Remove from the oven and let it cool for a few minutes before slicing and serving.
