
Muenster Cheese and Broccoli Soup

Ingredients
- 2 tablespoons butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups chopped broccoli florets
- 1 cup expired Muenster cheese, grated
- 1 cup milk
- Salt and pepper to taste
- Croutons for garnish (optional)
Instructions
- In a large pot, melt butter over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté until they are softened and fragrant.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the chopped broccoli florets and cook until they are tender, about 5-7 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the grated Muenster cheese until melted and well combined.
- Pour in the milk and stir until heated through.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with croutons if desired.
