
Monterey Jack Cheese Quesadillas

Ingredients
- 4 large flour tortillas
- 1 cup shredded unopened packaged Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced red onions
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, combine the shredded Monterey Jack cheese, diced tomatoes, diced red onions, chopped cilantro, ground cumin, chili powder, salt, and pepper. Mix well.
- Spread the cheese mixture evenly over two tortillas. Place the remaining two tortillas on top to form quesadillas.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add one quesadilla to the skillet and cook for 3-4 minutes on each side, until the cheese is melted and the tortillas are crispy.
- Repeat with the remaining quesadilla, adding more oil if needed.
- Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.
- Serve hot and enjoy!
