Ingredients
- 4 large flour tortillas
- 1 cup shredded unopened packaged Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced red onions
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons vegetable oil

In a large bowl, combine the shredded Monterey Jack cheese, diced tomatoes, diced red onions, chopped cilantro, ground cumin, chili powder, salt, and pepper. Mix well.

Spread the cheese mixture evenly over two tortillas. Place the remaining two tortillas on top to form quesadillas.

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add one quesadilla to the skillet and cook for 3-4 minutes on each side, until the cheese is melted and the tortillas are crispy.

Repeat with the remaining quesadilla, adding more oil if needed.

Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.
