
Vegetable Frittata
A delicious frittata recipe that uses expired but safe Unopened Frozen Egg Substitute to reduce food waste.

Ingredients
- 1 cup Unopened Frozen Egg Substitute (expired but safe)
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Add diced onion, bell pepper, and zucchini. Cook until softened, about 5 minutes.
- Add spinach leaves and cook for another 2 minutes until wilted.
- In a bowl, whisk the expired Unopened Frozen Egg Substitute with salt and pepper.
- Pour the egg mixture over the cooked vegetables in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
- Serve hot and enjoy!
