- 1 cup Unopened Frozen Egg Substitute (expired but safe)
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach leaves
- Salt and pepper to taste

Preheat the oven to 350°F (175°C).

In a large oven-safe skillet, heat olive oil over medium heat.

Add diced onion, bell pepper, and zucchini. Cook until softened, about 5 minutes.
