Ingredients

  • 1 cup Unopened Frozen Egg Substitute (expired but safe)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup spinach leaves
  • Salt and pepper to taste

Instructions

Preheat the oven to 350°F (175°C).

In a large oven-safe skillet, heat olive oil over medium heat.

Add diced onion, bell pepper, and zucchini. Cook until softened, about 5 minutes.

Add spinach leaves and cook for another 2 minutes until wilted.

In a bowl, whisk the expired Unopened Frozen Egg Substitute with salt and pepper.
