
Veggie Pancakes
Make use of expired mixed vegetable baby food to create delicious and nutritious veggie pancakes.

Ingredients
- 1 cup mixed vegetable baby food (expired but safe)
- 1 cup all-purpose flour
- 1/2 cup milk
- 1 egg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, combine the mixed vegetable baby food, flour, milk, egg, baking powder, and salt. Mix well until smooth.
- Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of vegetable oil.
- Spoon 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter, adding more vegetable oil to the skillet as needed.
- Serve the veggie pancakes warm with your favorite toppings.
