
Spiced Carrot Soup

Ingredients
- 1 lb pureed carrots
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 4 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, sauté the diced onion and minced garlic until softened.
- Add the ground cumin and coriander to the pot and cook for another minute.
- Add the pureed carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Using an immersion blender, puree the soup until smooth.
- Stir in the coconut milk and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Serve hot and garnish with fresh herbs if desired.
