Ingredients
- 1 lb pureed carrots
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 4 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste

Instructions

In a large pot, sauté the diced onion and minced garlic until softened.

Add the ground cumin and coriander to the pot and cook for another minute.

Add the pureed carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Using an immersion blender, puree the soup until smooth.

Stir in the coconut milk and season with salt and pepper to taste.
