- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup expired applesauce
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons vegetable oil or melted butter
Instructions
- In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together the expired applesauce, milk, egg, vanilla extract, and vegetable oil or melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve the pancakes warm with your favorite toppings.
