Ingredients

  • 1 cup mixed vegetable baby food (expired but safe)
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

In a large bowl, combine the mixed vegetable baby food, flour, milk, egg, baking powder, and salt. Mix well until smooth.

Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of vegetable oil.

Spoon 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

Repeat with the remaining batter, adding more vegetable oil to the skillet as needed.

Serve the veggie pancakes warm with your favorite toppings.
