Ingredients
- Haddock Purchased Commercially Frozen Raw
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/4 cup sour cream
- 1/4 cup sliced jalapenos
- Lime wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Place the haddock fillets on a baking sheet lined with parchment paper.
- Drizzle the olive oil over the haddock fillets.
- In a small bowl, mix together the chili powder, cayenne pepper, paprika, garlic powder, onion powder, dried oregano, ground cumin, and salt.
- Sprinkle the spice mixture evenly over the haddock fillets, pressing lightly to adhere.
- Bake the haddock fillets in the preheated oven for 15-20 minutes or until cooked through and flaky.
- While the haddock is baking, warm the corn tortillas in a dry skillet over medium heat for about 1 minute per side.
- To assemble the tacos, place a spoonful of shredded lettuce on each tortilla.
- Top with a haddock fillet, diced tomatoes, chopped cilantro, diced red onion, sour cream, and sliced jalapenos.
- Serve the spicy haddock tacos with lime wedges for squeezing over the top.
