  • Haddock Purchased Commercially Frozen Raw
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1/4 cup sour cream
  • 1/4 cup sliced jalapenos
  • Lime wedges, for serving

Instructions

Preheat the oven to 400°F (200°C).

Place the haddock fillets on a baking sheet lined with parchment paper.

Drizzle the olive oil over the haddock fillets.

Sprinkle the spice mixture evenly over the haddock fillets, pressing lightly to adhere.

Bake the haddock fillets in the preheated oven for 15-20 minutes or until cooked through and flaky.

While the haddock is baking, warm the corn tortillas in a dry skillet over medium heat for about 1 minute per side.
