Ingredients
- 6 expired frozen egg substitutes, thawed
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup diced celery
- 2 green onions, thinly sliced
- Salt and pepper to taste
- 8 slices bread
- Lettuce leaves and tomato slices for serving
Instructions
- In a medium bowl, mash the expired frozen egg substitutes with a fork.
- Add mayonnaise, Dijon mustard, lemon juice, celery, green onions, salt, and pepper. Mix well to combine.
- Toast the bread slices if desired.
- Spread the egg salad mixture on 4 slices of bread.
- Top with lettuce leaves and tomato slices.
- Cover with the remaining bread slices to make sandwiches.
- Slice the sandwiches diagonally and serve.
