
Vegetable Frittata
Make a delicious frittata using expired frozen egg substitutes. Ensure the eggs are cooked properly to maintain food safety.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen spinach, thawed and drained
- 6 expired frozen egg substitutes, thawed
- Salt and pepper to taste
- 1/2 cup shredded cheese of your choice
Instructions
Preheat the oven to 350°F (175°C).
Heat olive oil in a non-stick skillet over medium heat.
Add the onion, bell pepper, and zucchini. Cook until softened, about 5 minutes.
Stir in the thawed spinach and cook for an additional 2 minutes.
In a bowl, whisk the expired frozen egg substitutes with salt and pepper.
Pour the egg mixture over the vegetables in the skillet.
Cook for 3-4 minutes or until the edges start to set.
Sprinkle the shredded cheese on top.
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the eggs are fully set and the cheese is melted.
Remove from the oven and let it cool slightly before slicing and serving.
