  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup frozen spinach, thawed and drained
  • 6 expired frozen egg substitutes, thawed
  • Salt and pepper to taste
  • 1/2 cup shredded cheese of your choice

Instructions

Preheat the oven to 350°F (175°C).

Heat olive oil in a non-stick skillet over medium heat.

Add the onion, bell pepper, and zucchini. Cook until softened, about 5 minutes.

Stir in the thawed spinach and cook for an additional 2 minutes.

In a bowl, whisk the expired frozen egg substitutes with salt and pepper.
