Ingredients
- 2 slightly past expiration dragon fruits
- 1 cup arugula
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/4 cup feta cheese, crumbled
- 1/4 cup chopped pistachios
Instructions
- 1. Cut the dragon fruits in half and scoop out the flesh.
- 2. In a mixing bowl, combine the dragon fruit flesh, arugula, cucumber, and red onion.
- 3. In a small bowl, whisk together the lime juice and honey to make the dressing.
- 4. Drizzle the dressing over the salad and toss gently to combine.
- 5. Sprinkle the feta cheese and chopped pistachios over the top.
- 6. Serve immediately and enjoy!
