
Tartary Buckwheat Salad
A refreshing salad made with slightly expired Tartary Buckwheat

Ingredients
- 1 cup slightly expired Tartary Buckwheat
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the Tartary Buckwheat under cold water.
- In a pot, bring 2 cups of water to a boil and add the Tartary Buckwheat. Cook for 10-12 minutes or until tender.
- Drain the cooked Tartary Buckwheat and let it cool.
- In a large bowl, combine the cooled Tartary Buckwheat, cucumber, red bell pepper, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad ingredients and toss well to combine.
- Refrigerate for at least 30 minutes before serving.
- Serve chilled and enjoy!
