Ingredients

  • 1 cup slightly expired Tartary Buckwheat
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the Tartary Buckwheat under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the Tartary Buckwheat. Cook for 10-12 minutes or until tender.
  3. Drain the cooked Tartary Buckwheat and let it cool.
  4. In a large bowl, combine the cooled Tartary Buckwheat, cucumber, red bell pepper, and parsley.
  5. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  6. Pour the dressing over the salad ingredients and toss well to combine.
  7. Refrigerate for at least 30 minutes before serving.
  8. Serve chilled and enjoy!
