Ingredients
- 2 cups slightly expired barley
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the barley according to package instructions.
- Once cooked, drain and let it cool.
- In a large bowl, combine the cooked barley, cucumber, tomato, red onion, and parsley.
- In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the barley mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving.
