Ingredients

  • 2 cups slightly expired barley
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the barley according to package instructions.
  2. Once cooked, drain and let it cool.
  3. In a large bowl, combine the cooked barley, cucumber, tomato, red onion, and parsley.
  4. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the barley mixture and toss to combine.
  6. Refrigerate for at least 30 minutes before serving.
