  • 1 cup expired Beluga Lentils
  • 4 cups vegetable broth

  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender.
  3. Add the expired Beluga Lentils, vegetable broth, dried thyme, bay leaf, salt, and pepper. Stir well.
