Ingredients
- 1 cup expired Beluga Lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender.
- Add the expired Beluga Lentils, vegetable broth, dried thyme, bay leaf, salt, and pepper. Stir well.
- Bring the soup to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes or until the lentils are cooked through.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve hot and enjoy!
